My Favorite Summer Salad


This black bean, mango and avocado salad is one of my very favorite summer salads! It's bright and fresh, healthy and delicious. This salad is so easy to make. I think the most difficult thing about this salad is finding a mango and an avocado that are ripe at the same time. Here's the recipe:
Black Bean, Avoado and Mango Salad
2 cans of black beans drained and rinsed
1 Haas avocado chopped
1 mango chopped
2 limes juiced
1 orange juiced
1/2 cup chopped fresh cilantro
1/2 cup chopped sweet onion ot green onion
1 minced jalapeno
1 clove of garlic minced or squeezed through a press
1/4 cup olive oil
2 tbs. honey
1/2 tsp. cumin
Mix black beans, onions, cilantro and jalapeno in a bowl and set aside. In a smaller bowl whisk together the oil, lime and orange juices, cumin, garlic, and honey. Pour this over the bean mixture and toss. Gently fold in the mango and avocado. Chill for and hour or two and serve.
This salad has been a big hit with dinner guests of all ages. Enjoy!

  1. The list of ingredients says a juiced orange but the instructions mention lemon juice. Which is it? I wouldn't be so pedantic but I'm interested in making this up!

  3. I made it up and it was very good. Thanks for posting the recipe! I'll be doing it again, this time with more cilantro and avocado (they are the cowbell and I can't get enough cowbell.)
